Roasted Poha Chevdo from My Vegetarian Roots

Ingredients:

  • 1 bag Wots Kenyan Chevdo Chilli Lemon, 350g
  • 1 lb Poha (thin)
  • Curry leaves
  • ¼ cup cooking oil
  • 1 cup raw peanuts
  • 1½ cup raw cashews
  • Raisins
  • ½ cup dalia
  • 1 tsp turmeric 
  • Chili powder
  • Sugar
  • Salt
Steps:
  1. Preheat oven to 250° Fahrenheit. 
  2. Roast poha in the oven for about an hour or until crispy. 
  3. Heat oil and add Wots Kenyan Chevdo Chilli Lemon, peanuts and cashews, and curry leaves.
  4. Roast mixture on medium heat until golden brown.
  5. Add the dalia and raisins and saute 4 minutes over medium heat.
  6. Add roasted poha, red chili powder, salt, turmeric powder and sugar. Mix with roasted poha, red chili powder, salt, sugar, and turmeric powder, gradually adding oil and mixing gently.
  7. Serve.
