Roasted Poha Chevdo from My Vegetarian Roots
Ingredients:
- 1 bag Wots Kenyan Chevdo Chilli Lemon, 350g
- 1 lb Poha (thin)
- Curry leaves
- ¼ cup cooking oil
- 1 cup raw peanuts
- 1½ cup raw cashews
- Raisins
- ½ cup dalia
- 1 tsp turmeric
- Chili powder
- Sugar
- Salt
- Preheat oven to 250° Fahrenheit.
- Roast poha in the oven for about an hour or until crispy.
- Heat oil and add Wots Kenyan Chevdo Chilli Lemon, peanuts and cashews, and curry leaves.
- Roast mixture on medium heat until golden brown.
- Add the dalia and raisins and saute 4 minutes over medium heat.
- Add roasted poha, red chili powder, salt, turmeric powder and sugar. Mix with roasted poha, red chili powder, salt, sugar, and turmeric powder, gradually adding oil and mixing gently.
- Serve.
